Wide open spaces and blossoms
In the north of Germany, people like things to be clear and straightforward. The same applies to honey. The landscape between the seas is characterised by endless dykes, a damp maritime climate and, above all, rapeseed. When, in spring, many hectares of rapeseed fields are ablaze with bright yellow blooms, the busiest time of year begins for Northern German beekeepers. In addition, the fruit blossoms in the “Altes Land” region and the clover on the marsh meadows are also important sources of nectar for the bees.
Coastal feeling
The landscape is open and windy. The bees must therefore make the most of the fairly short but intense flowering periods of the Northern German spring. The cool nights and warm days during the rapeseed bloom usually ensure abundant nectar production. These conditions lend Northern German honey its unmistakable character.
Delicate creamy texture
Northern German honey is a breakfast classic. Due to its high rapeseed-nectar content, it is usually very pale in colour, ranging from almost white to ivory. It crystallises quickly and finely, which is why it must be stirred particularly gently and carefully. The result is a spreadable, creamy consistency that literally melts on the tongue, paired with a mild, sweet aroma.
Mountains, forests and meadows
In the south of Germany, the scene is quite different from that in the north. The idyllic Bavarian countryside is characterised by diverse landscapes: dense mixed forests, clear mountain streams and colourful alpine meadows. Beehives are often situated in sheltered spots on the fringes of forests or in orchard meadows, where biodiversity is particularly high.
The power of the forest
Whilst rapeseed dominates in the north, the south is a treasure trove of forest honey and diverse floral blends. Here, the much sought-after honeydew is provided by fir, spruce and oak trees in summer. Earlier in the year, dandelions, wild herbs and alpine flowers bloom in the meadows. This diversity results in subtle variations in flavour that can differ from valley to valley.
Aromatic and versatile
Honey from Southern Germany captures the unspoilt nature of the region’s landscapes. Our regional honey from Bavaria is created from the nectar of sun-kissed meadow flowers and herbs. It captivates with its pale colour and mild, floral aroma. The result is a spreadable, creamy treat that brings the essence of Southern German nature straight to your slice of bread.
